Green goddess sandwiches

Ingredients

  • 1/2 avocado
  • Small handful fresh basil
  • 1 tbsp freshly squeezed lemon juice
  • Salt
  • Black pepper
  • 4 slices fresh bread
  • Small handful fresh spinach
  • 1 inch of cucumber, thinly sliced
  • 75 g fresh mozzarella, sliced (optional)

Instructions

  • Add the avocado, basil and lemon juice to a mini food processor, along with some salt and pepper. Blitz until it has reached your desired consistency.
  • Spread the avocado mixture on two of the slices of bread. Top with fresh spinach, sliced cucumber, and fresh mozzarella. Finish with the other two slices of bread, and serve.
