Grilled halloumi tacos with mango salsa

Ingredients

For the mango salsa

  • 1 mango
  • 1/2 red onion finely diced
  • 3 tbsp fresh coriander chopped
  • 1 mild red chilli deseeded and finely chopped
  • 1 tbsp extra virgin olive oil
  • Salt
  • Black pepper

For the tacos

  • 200 g halloumi cheese
  • 4 mini flour tortillas
  • Lettuce and cherry tomatoes or other veg of your choice, to serve

Instructions

  • First, make the salsa. Dice the mango (I find the 'hedgehog' method works best), and add to the remaining salsa ingredients. Mix to combine, and set aside.
  • To prepare the tacos, cut the halloumi into 8 slices. Place them in a single layer in a frying pan over a medium heat, and cook for around 4-5 minutes, or until the underside is golden brown. Some liquid will be released, and once this liquid has evaporated, the cheese will become golden brown fairly quickly. Once this happens, flip each slice over, and cook the other side - this time it will only take around a minute, since the liquid has already been released.
  • Spoon some of the mango salsa onto the four tortillas, along with the lettuce and tomatoes (or whatever veg you've decided to use), and lay the slices of grilled halloumi on top. Serve immediately.
