I don’t know about you, but I think the sandwich is very underrated. I often think of it as a pretty boring lunch, probably because my sandwiches usually consist of cheese and lettuce, and not much else. Buuut, when I find a really good sandwich (epic avocado sandwich alert), it’s a revelation! And now that packed lunch season is well and truly upon us, I thought you might like a little veggie inspiration.
So here are 11 amazing vegetarian sandwiches for you to pack into your kid’s lunch boxes, eat at your desk, or just sit and snarf in your PJs.

Cranks! haven’t thought of them in years! They were the very first veggie restaurant I visited, 40 years ago when my boyfriend was living in London. Wonderful place.
I’ve never made it down to the restaurant, definitely somewhere I’d love to visit!

Brie with sun-dried tomatoes (aka cheese & tomato!) in ciabatta bread. I also enjoy anything with avocado :)
Grilled vegetables and halloumi is my current fave
Hummus and roasted pepper is my go-to. Usually when I have the right combination of leftovers in the fridge. All the best sandwiches are made with leftovers, I think :)

Goats Cheese & Tomato is my favourite sandwich at the moment :)
Oh man, I love these sandwiches!! They sold them at my university union and considering everything else was just meat meat meat, these were great! The cheddar gorge one is unreal. Hope to win!!
My favourite sandwich is avocado, goat cheese, pesto, roasted sweet potatoes, and alfalfa on sourdough bread. :-)
