I’ve been sharing my hearty vegetarian comfort food here since 2011, and over the past 15 years, I’ve shared over 700 simple vegetarian recipes. I’ve helped millions of vegetarians (and meat-eaters too!) create vegetarian food that is delicious, satisfying, and genuinely exciting.

👩🏻‍🍳 About Becca Heyes

I stopped eating meat over 25 years ago out of pure stubbornness, and am now a full-time food blogger with over a decade of professional recipe development experience (funny how these things work out!). All of the recipes you see on ECV have been created, tested, photographed and written by me in my own kitchen.

I live with my husband (drummer and leader of the best UK wedding band!) and our two incredible daughters. Only two of us are vegetarian, so all my recipes are meat-eater approved too – no rabbit food here!

Before becoming a full-time blogger, I trained and worked as a primary school teacher. My background in education influences how I write recipes – they’re always clearly structured, step-by-step, and easy to follow. I also hold a degree in psychology, which gives me an understanding of how people build habits around food and cooking.

When I’m not eating cheese, I’m a maths geek, lover of ska punk and musical theatre (in equal measures), and rom-com addict.

Easy Cheesy Vegetarian is a vegetarian food blog that’s packed with simple, reliable veggie recipes. If any of the following apply to you, you’ve come to the right place:

  • You’re a new vegetarian who needs some easy recipes to get you started.
  • You’re a long-time veggie who is looking for some fresh inspiration.
  • You’re a meat-eater who wants to cook some more meatless meals.

(and if none of the above apply, you’re welcome here anyway!)

This is a judgement-free zone – whether you’ve never eaten meat in your life, or your only experience with vegetarian food so far has been the occasional margherita pizza (or anything in between), I’m glad you’re here!

🍛 About my Simple Vegetarian Recipes

The 700+ vegetarian recipes I’ve shared here are always simple and straightforward, and full of flavour. I cook by three main principles:

  1. I don’t believe in using ‘weird’ or hard-to-find ingredients – it’s perfectly possible to create a tasty vegetarian meal using affordable ingredients from your local supermarket. It’s very rare you’ll find me using an ingredient that you can’t find easily.
  2. I’m a busy person (and perhaps a little lazy…), so my recipes are designed for efficiency. One pot recipes are my favourite, and I aim for no unnecessary cooking steps, minimal dishes, and clear instructions.
  3. I love food! Which means I don’t do tiny portions of fussy food. I like good, hearty meals with lots of flavour (and often lots of cheese!). Casseroles, pasta bakes, curries, stews – this is the kind of food I love.
