Coconut pineapple banana smoothie

Sorry about the long list of nouns one after another in the title of this recipe. I was considering going with ‘tropical smoothie’, but I personally find descriptive titles more tempting – so coconut pineapple banana smoothie it is.
It’s not often that every single ingredient of a recipe is listed in its title, but in this case, what you see is what you get. Literally: coconut milk, pineapple and bananas. They combine to give the most incredible tropical flavour that makes me feel like I’m back in Mexico.
(a dash of rum wouldn’t go amiss either, though depending on your lifestyle it may be less suitable for breakfast that way…)

I am quite partial to a good smoothie – I always go for some sort of juice or smoothie at a cafe when everyone else is having coffee or Coke.


Are you into blenders (as much as anyone can be ‘into’ a kitchen appliance, anyway)? Let me know if there’s anything in particular you’d like to see me make over the next few months! I’ve never had such a great blender before so I’m a bit of a blender newbie. To be honest, I’ve spent most of the time I’ve been using it just staring in awe at the way it makes the liquid rise right up in the jug with a big hole down the middle… I’m guessing this novelty will wear off with time? I hope so, because it makes for very unproductive cooking.

Coconut Pineapple Banana Smoothie

Ingredients
- 200 ml coconut milk 1/2 a tin
- 125 g pineapple chunks
- 100 ml pineapple juice I used half a large tin of pineapple chunks, including the juice
- 2 medium bananas
Instructions
- Add all the ingredients to your blender. Starting at a low speed, turn the blender on, and gradually increase the speed to medium. Blend for around 1 minute, until smooth. Serve chilled.
- Note: this recipe makes a beautifully thick smoothie. If you’d like to make it thinner, just add a little more juice or milk.

What a yummy smoothie recipe!! I’ve been really into smoothies lately but haven’t made one with coconut yet. Can’t wait to try it!
I need a blender so bad. I have an immersion blender that will do so things, but not kale, etc. I just have been so torn about the price because you see blenders listed from $59 on up to hundreds. I just can’t see paying so much for them, but don’t want to buy a cheap one and have to get another. I really like yours, but just seems so expensive for me. I will try your pineapple smoothie recipe soon. Thank you for sharing it with us and your new blender.
I know what you mean! My immersion blender is great for blending things in a pan, but wouldn’t really manage to make a smoothie or anything. A good blender is a bit of an investment, but I’m really enjoying having one! Kind of getting obsessed with smoothies! :) This Froothie blender is a lot cheaper than a Vitamix so keep it in mind if you decide to go for one in the future :)
On a different note….can the recipes measurements be posted as cups, tsp or tbsp….not ml or g? Thanks!
Hi Sharon, I am British and I post recipes using the British system – I’m sure if you were ever to write a recipe, you would use the system you are used to, and it wouldn’t even occur to you to do otherwise. In fact with my more recent recipes, I share both recipe formats – but the British system is very commonly used and I certainly won’t be giving it up any time soon.
Sounds like you are offended by my comment & that was not my intention at all. I’m not familiar with the British measurements & was merely asking if it could be posted in the American measurements. FYI….I have written recipes before!
Haha ok sorry if I sounded like I was offended. I just get similar comments on a nearly daily basis, telling me that I write my recipes wrong and that I should do them American-style. Hopefully you’ll find some recipes you like in my more recent posts, which are written in both styles :)
