33 tasty vegetarian kale recipes - it's not just for rabbits!

Kale!

It’s a vegetable that I don’t think I had ever tried until last year, when I was introduced to it via a cookbook all about kale (Let Them Eat Kale! by the absolutely lovely Julia from The Roasted Root). Since then, it’s quickly shot up to a pretty prominent position on my ‘favourite vegetables’ list (which is a list that I’ve never actually made, by the way, in case you think I spend my Friday nights writing lists of vegetables).

Kale is one of those ingredients that has become pretty trendy over the last couple of years, for no apparent reason (along with quinoa, chia seeds, cauliflower…). I suppose the main reason is that it’s delicious and seriously good for you (it’s a so-called superfood!), but it’s presumably been delicious forever, so I’m not sure what has caused the sudden kale lovefest. But I’m not complaining. Kale for everyone!

If you’ve never had kale, it’s your typical leafy green, but it’s much sturdier than, say, spinach. It keeps its shape when you cook it, and sometimes even goes a little bit crispy around the edges, which is amaaazing. If you want to serve it simply, try sautéing it in a little butter or oil, with some garlic and plenty of salt and pepper. Or if you want to try something a bit more complex, perhaps you’ll find some inspiration below!

So here are 33 of my favourite super tasty vegetarian kale recipes (some are my own, some are from some other amazing food bloggers). Enjoy!

  1. Mmmm, kale-a-palooza! I am happy to say that I loved kale even before it was “famous” – and it is one of the easiest, longest cropping things you can grow on your allotment. Thanks for all the kaley inspiration!

  2. Ooh thank you so much for this.
I have just discovered Kale and I mainly use it in smoothies so these are brilliant.
    Can’t wait to try them
    Thanks for sharing

  3. I’ve never tried kale. i love spinach but as you say it doesn’t hold its shape. I like the look of that potato and kale breakfast brunch. I may well pick up some kale then when I pop to Morrisons later this week. Tx
