50 vegetarian avocado recipes

You guys go nuts for avocados! If I post an avocado recipe, I know it’ll be a success. If it wasn’t for the fact that I’d end up getting ridiculously bored of them very quickly, I’d post an avocado recipe every day and relish in all the blog traffic brought to me by you avocado enthusiasts.
Since I can’t do that, I thought I’d do the next best thing, and share a collection of my favourite vegetarian avocado recipes. They’re so versatile – stick a few slices on top of basically any Mexican dish, blend them up to make an awesome creamy (but dairy-free!) sauce, smash them onto toast… you could try a new avocado recipe every day for a year without making the same thing twice. Unfortunately I don’t have all day, so I’ve been restrained enough to stop at 50.
I’ve split these recipes into meal categories (breakfast, lunch, dinner etc – even some dessert recipes!), but obviously if you feel like eating brownies for breakfast, or eggs for dinner, go for it. I won’t judge (in fact you’d kind of be my hero).
