Apart from being a vegetarian, I don’t follow any particular diet. But if I was going to, a low carb diet makes the most sense to me – much more sense than a low fat diet, a raw diet, etc.

If you feel the same, here’s a low carb dinner idea for you – pizza frittata! It contains all of my favourite pizza-style flavours, but without the bread – and with a few protein-rich eggs instead. I know, it’s not quite the same as a nice crispy base, but it’s a pretty good substitute, as far as low carb pizzas go!

Making an egg-based pizza isn’t a revolutionary idea, but most of the time I see the eggs used as part of a cauliflower pizza base (here’s an example from one of my favourite food blogs) – and although cauliflower bases look amazing, they’re a bit more labour intensive than my ‘cook eggs –> eat’ version.

Of course, it’s not particularly normal to need a spatula to serve up a pizza, and you definitely can’t eat it with your hands (though if I’m honest, I always eat pizza with a knife and fork anyway… who’s with me?) – but other than that, the flavours are spot on. It’s pretty hard to argue with something that’s smothered in tomato sauce and mozzarella.

It’s almost an upside-down pizza too, because most of the ‘toppings’ are actually underneath, inside the frittata. I went for peppers, onion and mushrooms, but if you don’t dig my choices, feel free to go for your favourite pizza toppings. As long as you cook the moisture out of them before adding the eggs, most veg will work.

The only thing I put on the top (other than the sauce and cheese) was some sliced black olives – because if anything can make something look like a pizza, it’s olives. I had to restrain myself pretty hard from making a smiley face with them.

By the way, you might have noticed that I served my pizza frittata with some garlic bread. I’m not actually on a low-carb diet, after all. Feel free to skip it if you are!

Ingredients

  • 1 tbsp oil
  • 1/2 onion sliced
  • 2 cloves garlic minced
  • 1/2 yellow pepper diced
  • 2 medium mushrooms diced
  • Salt
  • Black pepper
  • 3 eggs
  • 3 tbsp milk
  • 5 tbsp your favourite pizza sauce
  • 125 g grated mozzarella cheese ~1 cup
  • 1 tbsp sliced black olives
  • Fresh basil to serve

Instructions

  • Heat the oil in a medium-sized frying pan, and add the onion, garlic, pepper and mushroom. Cook over a medium heat for 5 minutes, until the vegetables are nearly soft. Season with salt and pepper.
  • Meanwhile, lightly beat the eggs with the milk.
  • When the vegetables are fairly soft, make sure they are evenly distributed across the pan, turn the heat down fairly low, and pour over the egg mixture.
  • Cook over a low heat for a few minutes, then move the pan under a medium grill (broiler) for a few more minutes. Continue to alternate between the two until the eggs are cooked through.
  • Turn the grill down fairly low.
  • Spoon the tomato sauce onto the frittata, and spread it out with the back of a spoon. Add the grated mozzarella and sliced olives, and return to the grill for a couple of minutes, until the cheese has melted.
  • Serve topped with fresh basil.

  2. That looks gorgeous, and a great idea for an alternative style of frittata! Very appealing. I do a similar courgette and goat’s cheese frittata, with fresh mint, which I love. Can’t wait for courgette season to roll around again!

  3. Never mind the low carbs, it’s all about the eggs in this house when it comes to my boys, so this recipe is PERFECT for them!! I made a sausage and roasted pepper frittata over the weekend which i’m going to blog this week, but now i’ve seen this i’m def going to have to give it a whirl – they’ll go crazy for it!

  4. Looks tasty! I like the idea of low-carb pizza, but a lot of versions require a crust that takes more effort than regular crust, so I’m definitely on board with using eggs to make a frittata base. Yum!
