31 vegetarian stove-top recipes
As a full-time food blogger, I spend about 50% of my days in my kitchen. Every appliance gets used multiple times a week – my oven, my hob, my slow cooker, even more obscure things like my waffle maker and spiraliser (okay, maybe I don’t use those multiple times a week… but pretty often).
Recently, MoneySuperMarket asked me to give up something I use regularly for an entire week as part of their One Week Energy Challenge. We often take prized possessions for granted, and sometimes if sacrifices have to be made, we might not be able to afford to use our favourite items any longer.
When I was trying to decide what to give up for the challenge, naturally my mind immediately went to the kitchen (big surprise there). I wanted to give up something that would be a challenge, but wouldn’t result in me just eating dry crackers all week (because that’s no fun for anyone – especially me). The answer was obvious: my oven! One whole week with no oven.
I had to rely on stove-top meals over the course of the week. Easy, yet somehow quite difficult at the same time. I actually found that my meals were a little healthier overall than usual – I could no longer rely on the ‘bung it in the oven’ kind of dinner that I sometimes resort to when I’m feeling a bit lazy (you know the kind of thing I mean – oven chips, shop-bought veggie burgers, garlic bread, that kind of stuff). Instead, there were more stove-top soups, stews, lentil dishes… all made from scratch and all full of veggies. Much healthier in all sorts of ways.
I also find that stove-top meals are often cheaper than the prepared ready-meals that you cook in the oven. Lentils, eggs, beans, pasta – all super cheap, and all cooked on the stove-top. I’ll definitely be remembering this next time I find myself a little strapped for cash – a meal can easily cost under £1 per person. The difference really adds up when you’re cooking for multiple people.

Sweet and spicy honey sriracha stir fry sounds really nice. I’m not technically a vegetarian but I’m super picky about which meats I’ll eat.

I wish I’d had this guide when I was doing #operationdryrot I was cooking on a single ring, the microwave and my slow cooker! It was bliss when I could finally have something crispy from the oven.
Haha yes ovens are definitely good for crisping things up! I definitely wouldn’t want to give it up forever, but cooking on the hob can be great in lots of ways :)
We bought a motor home to celebrate my husband’s retirement, and that doesn’t have an oven – it’s amazing what one can cook without! I find I use my oven less and less nowadays….

Wow! A whole week without your oven. I need to try that and with all these recipes there really is no excuse not to. I love the sound of that coconut and butternet squash soup. It sounds delicious.

i hardly ever use my oven these days other than to roast vegetables. Mostly because I am too lazy / hungry to cook anything that takes more than 15 minutes if it is not part of my job. What an interesting experiment!
Roasted veg are so worth it though! ;)
They totally are, but you can make a version on the stove top with a lidded frying pan which I think is equally delicious, and much, much quicker to cook!

These all sound so delicious and I have eyes on that cassoulet. I’m a big fan of stove top meals and actually despite my love of baking, I’d find it much harder to give up my stove top than I would my oven – for a week anyway!
I do love using the hob when I just want a quick dinner – everything in the oven always takes so long!
