31 Easy Vegan Recipes for Veganuary
This bumper collection of easy vegan recipes was inspired by the fact that I’ve decided to take part in Veganuary this year! Hooray!
If you’re not sure what that means, I will be eating only vegan food for the whole of January – and therefore, I’ll only be posting vegan food here too. I know a lot of you love your cheese as much as I do (well… almost as much…), and may not be thrilled at the thought of seeing only vegan recipes for a whole month – buuut, hopefully I’ll be able to show you that I can come up with some amazing plant-based recipes where you won’t miss the cheese! And if not… well, it will return in February.
Why am I doing Veganuary?
I’ve done Veganuary once before, quite a few years ago now, but I thought it was about time I took part once again. Although I joke about my love of cheese, I do actually really enjoy vegan food too, and I think eating vegan is a brilliant thing to do for the planet – if not long-term, then at least occasionally.
I also really enjoy challenging myself to step outside my comfort zone and try something new. I know vegan cheese exists, and some brands are great, so I’m told! But I’m going to try to come up with some recipes that are a bit more inventive than just swapping cheese for vegan cheese.
As with any shift in diet, it can take a while to figure out what to eat, so here are 31 easy vegan recipes to help see you through Veganuary! There are loads of ideas here, for breakfast, lunch and dinner – I challenge you to try one new recipe each day, even if the gaps are filled in with old favourites!
No weird ingredients!
As you know, I don’t do ‘weird’ ingredients, so these are all things you should be able to make with ingredients you can easily find in your local supermarket. I also haven’t chosen anything that’s reliant on vegan cheese, since if you’re used to eating regular cheese, I think it’s probably better to begin by enjoying vegan food in its own right, rather than trying to recreate your old cheesy favourites. This will also apply to all the recipes I post on the blog throughout January – there will be no bizarre ingredients that you have to scour health food shops to find, just everyday vegan ingredients cooked imaginatively.

Yay, I’m with you on the vegan cheese. Giving up cheese was my principal concern when I decided to take the Veganuary pledge. But, guess what? I haven’t missed it once yet and I haven’t gone near vegan cheese. Everything here sounds completely delicious and although I already eat lots of vegan food, I’m finding I’ve widened my repertoire considerable. I know it’s only Day 6, but hey!
Oh, and thanks for including my stuffed peppers.
I find the hardest thing is all those hidden milks in things – even really random things like crisps! Avoiding cheese is the easy part haha
This all looks good, and I’m glad you included some savoury breakfast recipes! If and when I have a vegan day, I usually breakfast on a peanut butter and Marmite sandwich, as I don’t really care for only sweet food at that time of day. We aren’t doing Veganuary this year, but I am always on the lookout for new vegan and vegetarian recipes. Happy New Year!
