    Vegetarian Tex-Mex Recipes

    Tex-Mex is one of my all-time favourite cuisines, as it's big on flavour, simple to prepare, and so easy to whip up using whatever vegetables you have lying around!

    From hearty Tex-Mex casseroles to quick and easy lunches, a rich bean soup and vegetable fajitas, there's a wonderful variety here.
