    Vegetarian Casseroles and Stews

    Is there anything more comforting than a hearty bowlful of stew?!

    These vegetarian casseroles are my perfect comfort food, and they're all easy to make, full of fresh ingredients, and packed with flavour.

    If you don't know where to begin, I'd recommend my enchilada casserole, creamy three bean stew, or a classic shepherd's pie.

    And don't forget, most stews can be improved with a good dollop of mashed potato or a few homemade dumplings!
