Banana and Peanut Butter Overnight Oats

Here’s a super quick recipe – banana and peanut butter overnight oats! Have you ever had overnight oats? They’re a huge trend at the moment, and while I’m jumping on food trend bandwagons, I thought I’d give them a try. I do like to see what all the fuss is about with these things.
Turns out, I’m a fan! (really, there are very few foods that I’m not a fan of…)

If you’re not familiar with overnight oats, they’re so-called because they’re left to soak in milk overnight. It softens the oats right up and gives a porridge-like consistency – you’d never believe that the oats haven’t been cooked. Overnight oats are eaten cold, so it’s a different experience to eating porridge (look at me talking about oats as an experience, I’ve become one of those people) – it makes a really nice change.
You can add whatever flavours you fancy – fruit, nuts, maple syrup or honey, chocolate spread, seeds… I went for banana and peanut butter overnight oats, since PB+B is undoubtedly one of the best combinations ever (none of this PB+J rubbish), and it seemed a good place to start.

These banana and peanut butter overnight oats are the perfect make-ahead breakfast for people who don’t have much time for faffing in the mornings. 2 or 3Â minutes of effort the night before, then in the morning you can grab the tub straight from the fridge and you’re all set – much quicker than cooking up porridge. They can even be eaten on the go if you’re running late. Which I usually am.


Banana and Peanut Butter Overnight Oats

Ingredients
- 2 bananas
- 100 g rolled oats (~ 1 cup)
- 250 ml milk (~ 1 cup) – use vegan milk if necessary
- 1 tbsp peanut butter
- 1/4 tsp ground cinnamon
Instructions
- Thoroughly mash the bananas in a bowl or tub. Add the remaining ingredients, and mix well. Cover, and leave in the fridge for 8 hours, or overnight. Serve cold.

Hi Becca, could I use another fruit in place of the banana.
I haven’t experimented with this recipe yet so I can’t say for sure. If you want to keep the peanut butter, just skip the banana altogether. Or, if you want a different flavour entirely, maybe something like finely chopped apple with walnuts and maple syrup? Or crushed peaches or berries? I bet most fruits would work :)
Adding peanut butter is a genius idea Becca. PB goes so well with bananas too. Love my porridge, but overnight oats make a great alternative in summer.
This is basically muesli! Long ago when I was young (and dinosaurs roamed the earth), we were served it once a week or so at school, where it was called “Swiss breakfast” – I learnt that it was called muesli on a trip to Switzerland. This was many years before packet muesli was invented (and if you soak that overnight, it’s infinitely nicer). I then found a recipe for a fruit muesli, which I have adapted and can be found here.
Yes I think when it’s mixed with milk and left it’s usually called bircher muesli – overnight oats are very similar :)
This sounds delicious, I’ve tried the overnight oats with a yoghurt and frozen fruit but it wasn’t for me – this recipe sounds right up my street
What a beautiful simple recipe. Those bananas look absolutely beautiful and who woulda thought to add peanut butter to oats! I add peanut butter to sauces but would never have thought to add to porridge like this. A great idea and one I shall be stealing this week.

Have heard of overnight oats and tried with yoghurt before (no milk needed) but I’m liking the sound of banana x
I LOVE the sound of the peanut butter and banana combo! Have never heard of “overnight” oats but it sounds a lot quicker for the morning rush than the usual faff! :)
